There are so many fun ways to involve your little ones in Christmas baking, but Gingerbread cookies have to be one of my favorites.

Plus you have to admit, baking is twice the fun when you involve the little ones.

This is the easiest gingerbread cookies recipe you can find plus they are perfect for Christmas gifts and taste amazing too! Don’t forget to add Rudolph’s red nose!

If Christmas was a flavour, what would it be? For me it would definitely be the warm and spciy gingerbread.
Before you get sad because you don’t have a reindeer shaped cookie cutter, let me tell you a little secret about these cookies.
All you need is a simple gingerbread man cutter….and all you need to do, is cut out the gingerbread men as normal and then turn them upside down. Voilà!
Ingredients :
3/4 cup vegan
butter, softened
1/2 cup coconut sugar
1/2 cup molasses
1 egg
1 1/2 tsp. vanilla
3 1/2 cups (430 g.)
gluten-free flour
1 Tbsp. cinnamon
1 Tbsp. ginger
1/2 tsp. nutmeg
1 tsp. salt
1 tsp. baking soda
80 gr Melted Chocolate (to draw the reindeers)
Instructions
- In a large bowl combine vegan butter and coconut sugar.
Beat with a hand mixer
until smooth and creamy. - Add egg, molasses, and
vanilla to the mixture and mix. - In a medium bowl.
combine flour,
cinnamon, ginger,
nutmeg, salt, and baking powder. Mix well. - Add dry ingredients to the
wet ingredients and
carefully mix to
combine until a soft
dough forms (it should
be a bit like play-dough). - Divide the dough into
two and wrap
tightly in plastic wrap. - Chill the dough for at
least 1 hour. (Don’t
skip this step) - Unwrap the dough
and lightly flour
the top. Cover with a
second piece of
parchment paper and
use a rolling pin to roll
the dough out. - Use the cookie cutter to punch out your shapes
- Bake your cookies at 175C degrees for about 8-10 minutes.
- Let them cool down then you can draw your reindeers with a melted chocolate in a piping bag.
