Peanut Butter Strawberry Cheesecake Bars

Are you ready for these easy-to-make peanut butter cheesecake bars?

Peanut butter is my weakness guys. That’s why I go crazy for these bars. They are creamy and delicious. They are gluten free, refined sugar free and packed with peanut butter and strawberry goodness!

These bars are to die for! The base is made from pecans, homemade gf granola, coconut sugar, maple syrup and coconut oil. The top layer is 200% peanut butter flavor and is so creamy and sweet that will probably make people doubt if these cheesecake bars are actually healthy!?

If you make this recipe you have to know that it might be very difficult to control yourself not to eat the whole peanut butter filling, I was digging in like a real peanut butter maniac. Trust me, it really is the yummiest thing I’ve tried recently.

I decided to top my bars with fresh strawberries, because they give more freshness to the recipe and at the same time they make them look cute.

IMG_6843One thing I love about these bars is that I can eat them frozen straight from the freezer, whenever I am in a need of something to satisfy my sweet tooth. But I enjoy them more when I let them stay out of the freezer for a few minutes so the peanut butter layer melts and it starts to run down the sides. Oh, my! Mouthwatering!

Peanut Butter Strawberry Cheesecake Bars

  • Servings: 5-6
  • Difficulty: easy

Ingredients

For the crust :

  • 1 cup pecans
  • 1/2 cup homemade gf granola
  • 1 tbsp coconut sugar
  • 1 tbsp maple syrup
  • 1/2 teaspoons salt
  • 3 tbsp coconut oil

For the filling:

  • 1 can full fat coconut milk
  • 1/2 cup creamy peanut butter
  • 2 tbsp maple syrup

Directions

1.) In a food processor blend the granola until it’s fine. Add in the pecans, coconut sugar, salt, maple syrup and melted coconut oil and blend again.

2.) Press the mixture into the bottom of a greased pan.

3.) In the food processor blend only the thick layer of coconut from the coconut milk, peanut butter, and maple syrup until fully combined.

4.) Pour the filling on top of the crust mixture. Sprinkle with strawberries.

5.) Place in the freezer for at least 2 hours before cutting and serving.

Let them sit for 5-10 minutes before serving for best results.
